Ingredients (Serves 4)
For the Taco Filling:
1 cup cooked black beans (or canned, rinsed and drained)
1 cup cooked lentils (brown or green)
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 bell pepper (red, yellow, or green), diced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili powder (adjust to taste)
Salt and pepper to taste
Juice of 1 lime
For the Toppings:
1 cup shredded lettuce or cabbage
1/2 cup diced tomatoes
1/2 cup diced avocado
1/4 cup chopped cilantro
1/4 cup vegan sour cream or plain vegan yogurt
Salsa of your choice (optional)
For the Base:
8 small corn or flour tortillas
Instructions
Prepare the Filling:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
Add minced garlic and diced bell pepper. Cook for another 2–3 minutes, stirring frequently.
Mix in cooked black beans, lentils, ground cumin, smoked paprika, chili powder, salt, and pepper. Stir well to coat the ingredients evenly with the spices.
Allow the mixture to cook for 5 minutes, stirring occasionally, to let the flavors meld together.
Finish with a squeeze of lime juice and remove from heat.
Prepare the Tortillas:
Warm the tortillas in a dry skillet over medium heat for 20–30 seconds on each side, or wrap them in a damp paper towel and microwave for 15–20 seconds.
Assemble the Tacos:
Fill each tortilla with a generous scoop of the taco filling.
Add toppings like shredded lettuce, diced tomatoes, avocado, and cilantro. Drizzle with vegan sour cream or yogurt and salsa, if desired.
